Zucchini Bread

3 eggs, beat til fluffy

Add to eggs:
1 cup oil
1 cup white sugar
1 cup brown sugar

Sift together:
1 tsp soda
1 TB cinnamon
3 cups flour
1/2 tsp baking powder
1 tsp salt

Add flour mixture to egg mixture;  mix well.

Fold into flour mixture:
2 cups grated zucchini
2 tsp mapeline
1 tsp vanilla
1 cup chopped nuts (optional)

Pour into greased and floured loaf pans.  Bake at 325 for 40-60 minutes.  Makes 2 medium loaves or 1 bunt cake.
