Sloppy Joes

1 pound ground beef
1 med. onion chopped (1/2 cup)
3 T catsup
3 T mustard
1 can condensed chicken gumbo soup
Chili powder to taste (about 1 1/2 tsp)

In medium skillet, cook and stir ground beef and onion until meat is brown and onion is tender.  Stir in catsup, mustard, soup and chili powder.  Simmer 15 minutes, stiring occasionally.  Spoon onto hamburger buns.  Makes 6 sandwiches.

Acini De Pepe Salad


Combine:
1 C sugar
2 T flour
1/2 tsp salt
Add:
1 3/4 C pineapple juice 
Gradually add:
2 eggs, beaten
Cook over medium heat until thick.  Cool

Cook and add to above
 1 C acini de Pepi 
Refrigerate overnight

Add:
1 can crushed pineapple
1 can pineapple tidbits
2 C mandarin oranges
1- 9 oz cool whip
1 C mini marshmellos

Strawberry/Raspberry Cream Squares

2 sm pkg OR 1 lrg Strawberry or Rasp jello
Dissolve in:
2 C boiling water

Add:
2- 10 oz pkg berries
Stir occasionally till thawed.

Add:
1 1/2 -2 C crushed pineapple
2-3 lrg ripe bananas, mashed

Pour 1/2 of mixture into 8X8 pan and chill until firm.

Spoon over gelatin:
1 C dairy sour cream.

Gently pour remaining gelatin over sour cream.  Chill until firm.
Serves 8

Six Week Bran Muffins


Mix together in very large bowl:
9 1/2 C raisin bran (15 oz)
2 C sugar
5 C flour
5 tsp baking soda
2 tsp salt (may use less)

Mix together and add to above:
4 eggs, beaten
1 C oil
1 qt. buttermilk

Fill muffin cups 2/3 full and bake 15-20 min at 400.  
Dough may be stored in tight container in refrigerator 
for six weeks.  Bake as needed.

Royal Raspberry Cake


Mix together and set aside:
2 C flour
1/2 tsp salt
1 Tb baking powder

Cream:
1/3 C butter, room temperature
Add gradually:
1 C sugar
Beat until light and fluffy

Stir in:
1 egg, room temperature
Beat 1 minute.

Combine:
 1 C milk, room temp.
1 tsp vanilla

Add dry ingredients alternately with milk mixture, beating
after each addition.  Spread in greased 9X13 pan. 
Spread evenly on top:
1 1/3 C fresh or frozen (unthawed) raspberries 

Bake at 350 for 30-35 min.  Cool 5 minutes.  and drizzle with Glaze

GLAZE
1 1/2 C confectioners sugar
2 Tb cream
1 tsp vanilla

Coconut Pecan icing


1 C evaporated milk
1 C sugar
3 egg yolks
1/2 C butter or margarine
Cook and stir over medium heat until mixture thickens--about 12 minutes

Add 1 tsp vanilla
1 1/3 C coconut 
1 C pecans

Beat by hand until frosting is cool and thick enough to spread.  Makes about 2 2/3 Cups

Chocolate Chip Cookies


Cream together:
2 sticks (1 cup) margarine
1 C shortening
1 1/2 C white sugar
1 1/2 C brown sugar
2 tsp vanilla
3 eggs

Mix dry ingredients and add to above:
4 1/2 C flour
1 1/2 tsp salt
2 tsp baking soda

Add:
Desired amount of chocolate chips

Bake at 375 for 12-13 min.

Buttercream Icing


1/2 C  (one stick) margarine
1/2 C shortening
4 C powdered sugar (1 lb)
1/4 C evaporated milk
1/2 tsp salt
1 TB vanilla

Cream together margarine and shortening on medium speed.
Add one C sugar and one TB milk alternately until sugar is gone.
Add salt and vanilla  and mix on medium for 5 minutes.  Makes
about 4 cups.

Chocolate Buttercream:  Add 1/2 to 3/4 C cocoa powder and 2 TB milk.

Cream Cheese Icing:  Add 4 oz. cream cheese and decrease Crisco to 1/4 Cup.

Tri Level Brownies

Play Dough


Mix together:
1 C flour
1/2 C salt
1 TB cream of tarter OR alum

Add:
1 C water
1 TB oil
food coloring

Cook on top of stove until it forms a firm ball.  Let cool.  Place in a closed container 

Grandma Crooks Fudge

Mix together:
3 C sugar
1/2 C cocoa
a little salt
Add
1 1/2 C whipping cream
1/2 C Karo 

Bring to a boil.  Reduce heat and cook without stirring until it reaches ------ degrees or soft ball stage. 
 As it cooks use a damp pastry brush to wash down the sugar crystals on the side of the kettle.  Remove from heat. 

Add,  but do not stir in:
 1/4 C butter
2 tsp vanilla. 

When lukewarm stir with a wooden spoon till it loses its gloss and is thick.  Put on a buttered surface.  Cut when totally cool.

Rhubarb Berry Pie


3 C rhubarb, cut up
1 C raspberries
Mix together:
1 1/4 C sugar
4 TB flour
Pour over fruit mixture and mix  
Place in unbaked pie shell.  Cover with top crust.  Bake at 400 for 40 minutes or till rhubarb is soft and filling starts to set.

Molasses Oatmeal Cookies


Mix together thoroughly:
1/2 C shortening
1 1/2 C sugar
2 eggs
6 TB molasses

Mix together and add to above:
1 3/4 C flour
1 tsp salt
1 tsp soda
1 tsp cinnamon

Stir in:
2 C oatmeal
1 C raisins

Drop on lightly greased cookie sheet
Bake at 375  8-10 min.  Makes about 5 doz. cookies.


Apple Pudding Cake


Cream together:
2 C sugar
1/2 C butter

Add:
2 eggs
4 C grated apples (not real fine)

Mix together and Add to above:
2 C flour
2 tsp soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 C chopped nuts (optional)

Bake in a 9X13 pan at 350 for 45 minutes.

Sauce for apple pudding

1/2 C butter
1 C sugar
1/2 C light cream ( I use evap. milk)

Bring to a boil and Add:
1 1/2 tsp vanilla
dash of nutmeg (optional)

Serve hot over individual servings.




7 UP Bundt Cake


Cream together:
1 1/2 C butter OR margarine
3 C sugar

Beat till light and fluffy then add one at a time:
5 eggs

Beat well.  Add:
3 C flour

Beat in:
2 TB lemon extract
3/4 C 7 UP

Pour batter into well greased and floured Bundt pan.  Bake at 325 for 1 to 1 1/4 hrs.


Green Salad, winter


Mixed greens
Spinach
Mandarin oranges
Dried Cranberries
Bacon Bits
Onion
Hard cooked eggs

Raspberry Poppyseed Vinegrette

1 1/2 C raspberry vinegar OR red wine vinegar
1 C olive oil
1 C sugar (may use less of may use splenda)
1 TB salt
1 1/2 tsp dry mustard
1 purple onion

Mix in blender

Add:
2 TB poppy seed

Keep refrigerated.  Shake well before using.  (May need to put in microwave for a few seconds to soften oil.)

Raspberry Vinegar


3 C cider vinegar
1 C raspberries
2 TB white sugar

combine vinegar, berries, and sugar together in a meduim glass bowl.  Mix gently and pour mixture into bottles.  Cover tightly and store at room temperature.  Best to let ist for a week or two to ripen.

Herbed Beef Stew

Brown:
2 lbs. beef stew meat, cut in 1 inch cubers
2 T oil

 Add:
3 C. water
1 lrg. onion, chopped
1-2 tsp pepper
1-2 tsp garlic powder
1 tsp roesemary, crushed
1 tsp dried oregano
1 tsp dried basil
1 tsp. ground marjoram ( I use a little less)
2 bay leaves
(tomato paste or sauce (optional)
Cover and simmer for 1 1/2 hour or until meat is tender.

Add:
2 C potatoes, peeled and cut in chunks
2 C slices carrots
1 green pepper, chopped

Simmer 30 more minutes or till veggies are tender.  Add more water if necessary.

Add other vegetables as desired.  I add:
Green beans, peas, corn, tomatoes.

Cover and cook till veggies are heated through.  Serves 10-12



All Day Chicken

4-6 chicken breasts
1 can crm mushroom or crm of chicken soup
1 can cheddar cheese soup *
1 small can evaporated  milk
grated Parmesan cheese
Seasonings

Season chicken with onion powder, garlic powder, salt and pepper.  In small bowl mix both soups and evap. milk. *  If I don't have cheddar cheese soup I use 2 cnas of chicken or mushroom soup and  I  add cheese to mixture.  Place chicken in greased casserole dish and pour the mixture over.  Sprinkle Parmesan cheese over the top.  Cover tightly with foil and bake at 200 for 6 hours OR bake at 350 uncovered for 1 hr. 20 min.

Cinnamon Rolls/Dinner Rolls

Cinnamon Rolls/Dinner Rolls*

Heat in microwave till shortening is partially melted:
3 Cups milk
1 Cup shortening

Add to milk and shortening:
1 Cup sugar

Mix:
2 TB yeast
1 cups warm water
1 tsp sugar


Beat:
2 eggs


Combine dry ingredients:
8 cups flour
4 tsp baking powder
2 tsp salt

Mix about one third of the dry mixture with the milk mixture.  Add yeast mixture and eggs.  Add remaining dry ingredients.  Do not knead.  Dough will be sticky.  (You may need to add 2-3 TB flour).  Let rise till double or cover and refrigerate over night.

Roll out dough in rectangle.

Spread melted butter (about 1/4 cup) on dough.


Mix and spread on buttered dough:
1 1/2 cps brown sugar
2 TB cinnamon
raisins, nuts or raspberries (optional)

Roll up.  Cut with thread (about 3/4 inch thick).  Put on baking sheet & let rise till double.  Bake at 400 for 20 minutes.  (or at 325 in a convection oven for about 10 minutes)

Frost with Buttercream Icing

*  For Dinner rolls I roll thicker.  Cut with round cutter.  Spread on butter, fold in half and place on baking sheet.  Let rise.  Bake as above.
