Cinnamon Rolls/Dinner Rolls*
Heat in microwave till shortening is partially melted:
3 Cups milk
1 Cup shortening
Add to milk and shortening:
1 Cup sugar
Mix:
2 TB yeast
1 cups warm water
1 tsp sugar
Beat:
2 eggs
Combine dry ingredients:
8 cups flour
4 tsp baking powder
2 tsp salt
Mix about one third of the dry mixture with the milk mixture. Add yeast mixture and eggs. Add remaining dry ingredients. Do not knead. Dough will be sticky. (You may need to add 2-3 TB flour). Let rise till double or cover and refrigerate over night.
Roll out dough in rectangle.
Spread melted butter (about 1/4 cup) on dough.
Mix and spread on buttered dough:
1 1/2 cps brown sugar
2 TB cinnamon
raisins, nuts or raspberries (optional)
Roll up. Cut with thread (about 3/4 inch thick). Put on baking sheet & let rise till double. Bake at 400 for 20 minutes. (or at 325 in a convection oven for about 10 minutes)
Frost with Buttercream Icing
* For Dinner rolls I roll thicker. Cut with round cutter. Spread on butter, fold in half and place on baking sheet. Let rise. Bake as above.
